Almost any of your favorite recipes which include red meat can be prepared from Emu. Emu meat will be very dark, with no marbling in the meat. All the fat is deposited between the meat and the hide. When properly processed, the meat will not have any fat even on the outside of the cut. Emu meat does not need to be cooked as long nor with as high a temperature as most other meats.
